Two New Favorite Recipes

So, I should preface this with "I made Neil proud!"

We needed a silverware tray. We haven't had one in a year or so and our silverware drawer has been screaming at us to take care of it. So, I set out to find a thrift store in the area and settled on Goodwill. When I got there, I didn't find a tray, but I did pick up some hangers that we needed and a little purple baking dish that I envision some good, hot dips in.

When I left, it was about 11:30 a.m. My stomach was growling and wouldn't ya know, I look out and see Chipotle, In-n-Out, AND Noodles and Company! I didn't even know there was a Noodles and Company in Point Loma. I did my mental talk with myself, "Oh, macaroni and cheese sounds so good!" "I bet you could call mom and she would give you the recipes she used to make" "Noodles and Company would be SOO much faster." "I bet I have all the ingredients, except macaroni at the condo and you do realize you live right next door to a grocery store..."

So, by my surprise, I passed by the restaurants and came on home. I called mom, no answer. I called dad to find out where mom was. Then I set out to find my own recipe. And, I found it. It was SO good! I did change the recipe a bit and only used Velveeta (because that's all I had) I could just picture it with broccoli and maybe some ham in it. Oh so good. So here it is:



The second recipe is our new favorite. We also make lime shredded chicken in bulk and then freeze it, so I thawed one of those out and mixed it with some cheese. I wrapped them up in 6 flour tortillas and put them seam side down. In a pan, I melted 3 T. butter and then added 3 T. flour and mixed together. Then I added 1 c. broth and stirred until it was nice and thick. Then I added one cup of sour cream and poured in some green enchilada sauce from a can. I took that mixture and poured it all over the rolled tortillas. I sprinkled it with more cheese and baked. It was even better than the macaroni and cheese, if it could happen.

those cookies are by far the best peanut butter cookies we've had. Actually have some dough balls still in the freezer. Think I might make some!
