Our Favorite Brownie Recipe

I got my hands on a new brownie recipe the other day.  I've never been able to make brownies.  I have always overcooked them and they turn out crumbly and dry. Not the case with these brownies!

Chocolate Strawberry Brownies

3/4 cup flour
1 cup sugar
3/4 cup unsweetened cocoa
1 tsp. baking powder
1/4 tsp. salt
1/3 strawberry jelly, or whatever you have (seedless is better)
1/3 cup water
5 T. salted butter
1 large egg, lightly beaten
1 large egg white
1/3 cup semisweet chocolate chips
Powdered sugar (optional)

1. Preheat oven to 350 degrees. Coat the bottom of a 9 inch square baking pan with butter and a dusting of flour.

2. Whisk together flour, sugar, cocoa, baking powder and salt in a large bowl. In a small saucepan combine jelly, water and butter; bring to a boil. Add hot mixture to the flour mixture; stir well.

3. Add egg and egg white to batter; stir until smooth. Stir in chocolate chips and scrape batter into prepared pan. Bake for 22-25 minutes (we did 19) or until a toothpick inserted in center comes out with a few moist crumbs-do not overbake. Garnish with powdered sugar, if desired. Makes 16 squares.
